Over the past five years cupcake shops exploded all over town, kind of like frozen yogurt places have this year. (Someone please make those stop, please I am begging) I have always liked cupcakes, just the perfect amount of cake to frosting. I really enjoyed making the mini ones, I used to bake all the time as a form of relaxation but I can’t remember the last time my hands got together with a whisk and bowl.
